Don't be fooled by the name, Zombie Eyes are a simple and easy to make recipe that is guaranteed to be a hit with both kids and adults.

Halloween "Zombie Eyes"
Ingredients:
2 ripe avocados
1 punnet of cherry tomatoes (more on the large side)
5 hard-boiled eggs
1 heaped tbsp organic Greek yogurt
Juice of ½ lemon
Salt & pepper to taste
Pinch of smoked paprika
6 Kalamata olives, halved
Method:
- After washing and drying tomatoes, slice a thin layer off the bottom so they sit flat.
- Slice off the top of the tomatoes and hollow out the seeds and centre, leaving an empty cavity.
- In one bowl mash boiled eggs and in another bowl mash together avocados and yogurt.
- Combine egg and avocado mix and stir. Season with salt, pepper and lemon juice.
- Fold down a piping bag and spoon in the green mixture.
- Pipe the mixture into the tomatoes until slightly coming out of the top. Alternatively you could also spoon the mixture into the tomatoes.
- Sprinkle each tomato with paprika and top with half an olive to finish off the eye.
