Halloween “Zombie Eyes” Recipe

Halloween is just around the corner and whether you are hosting a party with friends or having a quiet night in with the kids, why not try a recipe that is a healthy but oh so delicious- Zombie Eyes!

Don't be fooled by the name, Zombie Eyes are a simple and easy to make recipe that is guaranteed to be a hit with both kids and adults.

Avocado are a great source of antioxidants and omega 3 essential fatty acids which can help to reduce cell damage and inflammation in the body. Avocados are beneficial to our gut health as they are a good source of fiber. Due to the fiber and good fats content, avocados can promote healthy weight as they provide a sense of fullness. Healthy weight is essential for fertility health as it assists with hormone balancing and healthy ovulation.

Avocados are great for pre conception care as well as during pregnancy as they provide a source of folate which is essential for healthy fetal development. Avocados also provide energy, boosts libido, provides nutrients needed for sexual organs and are a good source of vitamin E which is required for good sperm health.

Halloween "Zombie Eyes"


2 ripe avocados
1 punnet of cherry tomatoes (more on the large side)
5 hard-boiled eggs
1 heaped tbsp organic Greek yogurt
Juice of ½ lemon
Salt & pepper to taste
Pinch of smoked paprika
6 Kalamata olives, halved

  1. After washing and drying tomatoes, slice a thin layer off the bottom so they sit flat.
  2. Slice off the top of the tomatoes and hollow out the seeds and centre, leaving an empty cavity. 
  3. In one bowl mash boiled eggs and in another bowl mash together avocados and yogurt.
  4. Combine egg and avocado mix and stir. Season with salt, pepper and lemon juice.
  5. Fold down a piping bag and spoon in the green mixture.
  6. Pipe the mixture into the tomatoes until slightly coming out of the top. Alternatively you could also spoon the mixture into the tomatoes.
  7. Sprinkle each tomato with paprika and top with half an olive to finish off the eye.
